Harvesting olives to produce the best “extra virgin olive oil from Tuscany” takes place from November-January, depending on the type of olive you have and depending upon the region in which your olive grove is located.
The right time is when the olives have almost turned from green to purple. At Villa Il Colombaio di Montebenichi, harvesting time has been historically the second half of November. It is precisely because of this seasonality that we offer the Tuscan harvest vacation from mid November until the first week of December.
Harvesting olives is not for the faint of heart as it is not a mechanized job. The drill includes spreading nets at the base of the trees, and then raking the olives from the branches so the fall in the nets. Finally, after a tree has been fully raked and all the olives have fallen on the nets, they must be collected in plastic cases or <i>cassette</i>, and taken uphill to the house, where they are later put into big bags to be taken to the olive press or mill.
During your Tuscan vacation harvest experience you will be expected to get up early, around 8 am, get dressed in layered warm clothes, and have a warm drink and toast or cookies for breakfast.
A good Tuscan lunch with local produce and incredible flavors will be served and cleaned up for you, while everybody goes back down to continue harvesting. Late fall and winter days are short, so you will stop picking at about 4 pm.
Some nights you will be let chill out in front of the fire with good Chianti wine, some good movies or just a good book to read. Three evenings of your choice you will have Vera come into the house and give you cooking lessons, the result of which you will enjoy during dinner.
Of course you will be party to the first pressed <i>olio extra vergine di olive</i>, the fruit of your labor, literally! Nothing tastes as good as freshly pressed extra vegine olive oil over toasted Tuscan bread with the local Chianti Classico wine. It is just, truthfully the <b>flavor of Tuscany</i>.
